How to manage restaurant orders and kitchen operations
Published 2026-11-01
A clear order path reduces missed items and repeated questions between the floor and kitchen. Agree on a shared process before adding more devices or screens.
Capture the order once
Use a consistent method for table, takeaway and delivery orders. Identify the table or customer, record item options and notes, and make changes through the same order rather than relying on verbal updates.
Set a simple rule for who may add, remove or discount items after an order reaches the kitchen. The team should be able to see what changed and when.
Route work to the right station
Separate food and drinks when they go to different preparation areas. Make tickets easy to scan, and agree how the kitchen signals an item is cooking, ready or unavailable.
Tell waiters how to collect ready dishes and how to handle a delayed course. If the kitchen screen or printer is unavailable, have a backup procedure that avoids duplicate orders.
Close the bill and learn from service
Before payment, confirm that every ordered item is included and any cancelled item is handled correctly. For split bills, explain how items or shares are allocated.
Review busy periods, popular dishes, voids and payment differences after service. Small regular reviews help identify menu, staffing or handoff issues.
Checklist
- Use one order record from table to kitchen
- Route food and drinks clearly
